An emphasis on fresh produce and food to go has seen sales at Spar’s latest Store of the Future rocket by 14% in its first week of trading.
The 3,000sq ft store in Broomhill, Glasgow, was closed for three weeks during the refurbishment, which cost more than £250,000.
Fresh produce was moved to the front of the store and more than 550 lines including organic, local and seasonal products were added. A fresh meat range and ‘cooking corner’ with associated meal ingredients was also created, as was a new ‘to Go’ snacking area to attract passing trade.
Overall, the number of chilled products was increased by 42%, fresh fruit and vegetables by 133%, bread and cakes by 50%, and grocery cut by 17%.
Sales were up by 25% in the second week, and manager Paul Kenyon said basket spend was an average £5.30.
